1.5 c milk (I used hemp)
1 stalk rhubarb - diced and frozen
3 dates - diced for easier blending*
1 avocado
I don't think a beverage this creamy can rightfully be called a smoothie - ice cream or no ice cream, this is a shake! The dates and the rhubarb balance out nicely. I feel quite strongly that rhubarb is one of the most misunderstood fruits out there. It is so delicious in so many circumstances, and yet, it is always just considered a weird pie; a pie no one would glance at if apple, cherry, or pumpkin were also available. Rhubarb, however, is tart and delicious, and it makes me happy. So, please give it a chance!
*If you are using an ordinary blender (as opposed to a Vita-Mix or similar), you MUST chop up your dates before blending them. Your blender shouldn't have any problem with chopped dates, but whole ones may break it. If you don't want to risk it, try using date paste, or eliminate the dates altogether, and just sweeten with agave or stevia.
